Dom Pérignon was the 17th century Benedictine monk who's goal was “to make the best wine in the world”.For a young monk just 30 years old, it took a visionary spirit and exceptional audacity to set such lofty ambitions. He succeeded in transforming the history of wine and is known today as the person who "invented" Champagne.
A rigorous selection process in both the vineyard and winery ensures that only the best grapes go into Dom Pérignon. Chardonnay and Pinot Noir are used in roughly equal proportions without one variety dominating the other.
His name was originally registered by Eugène Mercier. He sold the brand name to Moët & Chandon, which used it as the name for its prestige cuvée, which was first released in 1937.
In its youth, Dom Pérignon shows incredibly smooth, creamy fruit with perfect balance and weight. As it ages, it takes on wonderfully toasty aromas and a finesse equalled by very few of the other Grandes Marques. |

As a Champagne not famous for its early approachibility and one usually known to hit its peak after at least ten years in bottle, Dom Pérignon 2000 is breaking the mould. It is already more approachable than the 1999 and in our opinion as seductive as the fantastic 1996.

"Golden yellow, enlivened with iridescent swirls. On the nose, it is revealed layer by layer, at first hints of gently roasted almonds and hazelnuts are gradually illuminated by tangy grapefruit notes accented with hints of rhubarb sweetness and spices. And then the fruitiness radiantly asserts itself in an intense bouquet of tropical fruits and mellow velvety flavors. The initial power gradually dissolves into warm, rich, creamy opulence, before the energy bursts forth once more, vibrating in a crisp finale with lingering hints of sap and liquorice. Blend: Chardonnay 50%, Pinot Noir 34%, Pinot Meunier 16%. Drink 2008-2025+"

"The 1998 Dom Perignon Rose is a striking, intensely perfumed Champagne redolent of sweet candied cherries and spices. This medium-bodied wine possesses gorgeous structure, but ideally another year or two of cellaring is warranted in order for the full range of aromas and flavors to emerge. The Dom Perignon Rose is 80% Chardonnay and 20% Pinot Noir, with most of the Pinot coming from the south-facing vineyards of Ay.
