This 20 hectare domaine has been in the same family since 1815 and is run by Bernard Billaud, who truly believes meticulous viticulture is key in allowing the terroir to express itself in his wines. The success of this domaine is a winning combination of great vineyard sites (including the Premiers Crus, Mont de Millieu and Vaillons and the Grands Crus, Blanchot, Les Clos and Les Preuses), the latest winemaking technology and decades of family know-how. They practise lutte raisonée at the domaine.
The majority of the domaine`s wines see no oak at all, apart from the Premier Cru Mont de Milieu which is 40% vinified in oak and the Grand Cru Les Blanchots, which is 100% vinified in oak. The aim is always to produce crisp, mineral Chablis with great elegance, purity and balance. They are fantastic when young but also have huge potential for ageing: the grand crus typically improve for at least a decade as their high acidity is covered by richness of fruit.
