This domaine is now certified biodynamic in their vineyards. The vineyards are relatively high in altitude, at 200 to 400 metres above sea level, and is one of the best settings in the Languedoc for growing Pinot Noir and Chardonnay. Run by Jean-Louis Denois, a sixth generation producer from Champagne, the domaine has brought world-class techniques to the sparkling wines of Limoux. The grapes are from the Limoux region, which enjoys a perfect climate, thanks to its altitude and the proximity of the Pyrénées, allowing the grape juices to have perfect balance.
The wine is of exceptional quality, with great finesse, poise and balance. The Tradition Brut is a 50/50 blend of Chardonnay and Pinot Noir and is a great alternative to Champagne.
