An evening spent with Stéphane Vedeau of Ferme du Mont is an absolute education. This extremely knowledgeable young winemaker has very passionate, forthright views about his art. His philosophy is one of natural methods but maximum extraction to produce wines with upfront fruit and huge depth of flavour. It’s not uncommon for his Châteauneuf-du-Pape to undergo maceration right through the winter only to finish fermenting when the warmth of spring returns! The intensity of his character is certainly reflected in his Châteauneuf-du-Pape Côtes Capelan – a particular favourite of Robert Parker.
