Sylvie is one of our favourite growers; she is an energetic and passionate winemaker as well as an avid traditionalist, spending most of her time lovingly tending her vines. The estate comprises five hectares in Gevrey-Chambertin, with a sizeable plot of the Premier Cru Clos St-Jacques just behind the family house’s garden! The average age of the vines is high for the region. The domaine has followed biodynamic principles for over 20 years and is now fully organic. All grapes are de-stemmed, crushed and fermented in open wood vats, then put in barrels for the secondary fermentation and ageing. The barrels are of various ages to accommodate the different cuvées, with only Clos St-Jacques using a high proportion of new oak.
