The youthful Thierry Pillot is, like his wines, a breath of fresh air: unpretentious and occasionally cutting through received ideas always with an amiable air and a sense of fun. Thierry runs the domaine with his sister Chrystelle and together they have overseen the expansion of the domaine to a total of 13ha.
Thierry’s wines are all made with wild yeast fermentation and have a beautifully balanced acidity with a clean, vibrant mineral character. He uses a minimal amount of new oak, which means the wines are far more expressive of the terroir. The style and weight of the wines perhaps occupy a territory midway between the styles of Lamy and Gagnard-Delagrange. With clean lines, freshness and being very user friendly they reflect Thierry’s likeable and open personality to some extent. These are truly unforgettable, seductive wines that are among the very best in Burgundy.
